PHASE 1 FRIENDLY: HOMEMADE MEATBALL SALAD
"Afternoon pick-me-up today! Since I work two jobs and don't get home until around 6, I've started splitting my protein, or at least adding some protein in around 3/3:30 everyday. This helps curb my hunger a little longer. Today I have a huge salad with cucumber, pepper and onion (fell short on my 2 cups of veggies for lunch today, so I added some more to my salad). I added 3 of the IP friendly meatballs I made the other night for some protein. I made my own dressing that consists of extra light olive oil, Franks Red Hot, soy sauce, garlic powder, black pepper and sea salt; DELISH and SPICY ... this is very satisfying!" - Nikki
Salad (veggies can be replaced or mixed:
2 cups lettuce, or mixed greens
½ cup chopped cucumber
½ cup diced red pepper
½ sweet onion, chopped or sliced
3 homemade meatballs, chopped (see recipe below!)
1 tbsp light olive oil
Dash of hot sauce
Splash soy sauce
Salt, pepper, garlic powder to taste
Homemade Meatball Recipe
"Took a crack at making IP friends meatballs tonight---SUCCESS!! So happy with how they came out. Made them with half ground turkey and half 93% lean ground beef. DELISH! Can't wait to have these for dinner tomorrow!!"
*Remember, on the Ideal Protein protocol, you should measure 8oz of lean meat BEFORE it is cooked – so when making your meatballs, be sure to weigh each one before cooking (2oz per meatball is recommended) so you know how much you are eating!
8 oz ground turkey
8 oz 93% lean ground beef
2 tbsp low sodium soy sauce
Dash hot sauce
2 tbsp minced garlic
Pinch garlic and herb seasoning
Combine meats into a large bowl. Add remaining ingredients and mix until thoroughly combined. Divide mixture into 8 equal 2 oz portions, and form into balls. Lightly spray a frying pan with light oil, and cook meatballs until lightly browned on each side.
